There are some steps you can take to ensure that measuring water activity with the AwEasy as accurately as possible:
•Allow the probe to reach the same temperature as the sample. This is particularly important if the probe has been stored in a different temperature environment than the sample. You should allow the probe to sit in the same environment as the sample for a period of time before taking your measurement.
•Stir the sample thoroughly before taking your measurement. This will help to ensure that the sample is homogenous, and that any variations in water activity within the sample are accounted for.
•Take multiple readings. Water activity can vary depending on the location of the probe within the sample, so taking multiple readings can help to provide a more accurate measurement. Be sure to move the probe to different locations within the sample, and take readings at different times, to account for any temporal variations in water activity.
•Calibrate the probe regularly. Even with proper handling, probes can become less accurate over time. Calibration ensures that the probe is measuring water activity correctly. You can calibrate the probe using standard solutions of known water activity, or by sending the probe to a calibration service.
•Check also the location: Measure only in rooms with constant temperature; ideal are rooms with small daily and yearly temperature variations. Avoid heating of the measuring equipment by sun radiation or radiators, draught, body radiation etc.
